Description

Seiichi Saito has been studying and making wine in Burgundy since 2006. His Petit-Roy project started in 2017, and aims to make superb natural-style Burgundy.

For this cuvée he purchases and harvests Chardonnay from the lieu-dit of Les Combottes, part of his micro-négoce project. The fruit is pressed, and the juice is fermented and aged entirely in neutral barrel for 11 months. Pair this medium-bodied dry white with tuna tartare.
